RECIPE: RAW BILLIONAIRE SHORTBREAD


This stuff is simply magic. Whilst researching alternative gluten-free/wheat-free desserts online, I came across this heavenly recipe on goodness guru and let me tell you, once you have tasted this, there is no going back. This billionaire shortbread/snickers bar recipe is free from refined sugar and flour, has all sorts of yummy, good-for-you ingredients inside (dates, nuts and coconut oil) and best of all it is RAW - no baking here. I found these keep best in the freezer as they tend to go a bit too gooey at room-temperature. The texture is divine, from the crunchy chocolate top, to the gooey moreish of the middle... Just thinking about it makes me want to go and make another batch right now, and I might well do that....

Ingredients

For the healthy shortbread:
• 1 cup oats
• 1 cup flaked almonds
• 1/4 cup sprouted buckwheat (I substituted corn flour for ease of ingredients)
• 2 tbsp maple syrup
• 4 tbsp melted coconut oil
• pinch salt
For the peanut caramel:
• 220g soft medjool dates (I used lower-quality dates with no problem!)
• 1/4 cup warm water
• 1 tbsp coconut oil
• 2 tbsp peanut butter (here I used my own homemade peanut butter to avoid additional sugars etc)
• Pinch salt
For the raw chocolate:
• 1 cup melted coconut oil
• 1/3 cup raw cacao powder
• 1/2 cup maple syrup
• pinch salt

Method

Line a baking tin with parchment paper.
To make the base, blitz the oats, flaked almonds, salt and sprouted buckwheat in a food processor until you get a flour like consistency. Add the maple syrup and the coconut oil and blitz again. Press into the bottom of the baking tray and place in the freezer.
To make the peanut caramel add all the ingredients to the food processor and blitz until you get a smooth consistency. Spread over the healthy shortbread and put back in the freezer.
To make the raw chocolate whisk the melted coconut oil and cacao powder in a mixing bowl until glossy. Add the maple syrup and salt and continue mixing until evenly combined.
Pour the raw chocolate over the caramel layer and leave to set in the freezer overnight.

OMG- I totally have to make this!!

I'm starting to put together a list of stuff I wanna make for Xmas (I think I might be the only person in the country planning on having tumeric quinoa fritters for Christmas Lunch!?!).....and this is deffo going on that list :)))

Thanks guys and you're welcome! As I said, I found the recipe on goodness guru and just had to give it a whirl. I played around with the ingredients a bit based on what I had in my store-cupboard and still got a divine outcome!
